Serves 4, cooking time 3 1/2 minutes
2oz caster sugar
2oz self raising flour
1 medium egg, beaten
2 tbsp milk
2 tbsp syrup
I tin of custard
Chef says: This recipe me reminds me of the 80s when my family got our very first microwave oven, my mum tried to cook everything in it, not all of it good though! This is so quick to make and tastes delicious. I make it with golden syrup but you can use jam or chocolate sauce. For a chocolate version leave out 1/2oz of flour and replace with a rich cocoa powder and use chocolate sauce instead of syrup.
Cream together the butter and sugar until smooth. Gradually mix in the egg and milk. Then sift in the flour and gently fold in. Grease a microwavable pudding dish, then put 2 tablespoons of golden syrup, jam or chocolate depending on your choice. Pour in batter, and cover with cling film. Cook the pudding for 3 1/2 minutes on full powder. After cooking the pudding will set a come away from the inside of the bowl. Remove the cling film and turn out onto plate. The sauce should run over the sponge, serve hot with custard or fresh cream.
