Serves 4, prep time 15 minutes, cooking time 45 minutes
2 large chicken breasts
1 tsp all-purpose seasoning
2 ciabatta rolls
1 tsp mixed herbs
1/2 tsp garlic powder
Chef says: A tasty midweek meal – easy to prepare and a great way to use up old bread rolls or slices.
Slice the chicken into thin strips, place in a bowl and sprinkle with the all-purpose seasoning. Blitz the ciabatta in a food processor until it resembles fine crumbs. Pour the crumbs into a bowl, season, and add the mixed herbs and garlic powder. In another bowl, whisk the egg. Lightly grease an ovenproof dish and pre-heat the oven to 180 degrees celsius/gas mark 4. Piece by piece, dip the chicken in the egg, then roll it in the breadcrumbs and place into the ovenproof dish. Once all the chicken is coated, cook in the oven for about 45 minutes, until the breadcrumbs are a golden brown. Season with salt and pepper, and serve with lemon wedges and ketchup.
