Sweetcorn Fritters with Mango Salsa

SWEETCORN

Preparation time 15 minutes, serves 6-8

For the salsa
1 fresh mango
1 ripe avocado
1 red pepper
1 small red onion
Juice of a lime
Handful of chopped coriander

Method
Peel
 the mango and cut into small cubes. Slice the avocado and cut in to cubes the same size as the mango. Finely chop the red onion and pepper then place all the ingredients into a bowl and add the fresh lime juice. Add the chopped coriander and gently mix. Chill in the fridge for 15 minutes while you prepare the batter.

3 1/2 oz  plain flour
1/4 pint of milk
I egg
1 tsp of all-purpose seasoning
1/2 tbs bicarbonate of soda
Pinch of salt
6oz tinned sweetcorn
Handful of coriander
Oil for frying

Method
Sift the flour, bicarbonate of soda and seasoning into a large mixing bowl. Form a well in the centre and add the egg, start to stir in the egg while gradually adding the milk. Beat the mixture until its smooth in consistency. Next, add the sweetcorn and combine, then add the chopped coriander. In a frying pan gently heat some oil to a medium heat. Drop a tablespoon of the batter and allow to spread out. Fry for two minutes each side, remove the fitters from the pan and place on some kitchen towel. Repeat the process for each fitter until all the batter is used.
