Serves 8, preparation time 15 minutes INGREDIENTS 2 lb of minced chicken 1 diced red onion 1 tsp of jerk paste 2 tsp of jerk seasoning 1 tsp of garlic powder 2 medium bread rolls Handful of coriander 1 egg 8 burger buns To serve 1 cucumber 2 large tomatoes Jalapenos Tomato ketchup American style mustard 8 burger buns METHOD In a food processor blitz the bread rolls into breadcrumbs. Place the minced chicken in a bowl and add the jerk paste and seasoning. Pour in the breadcrumbs and add the remaining ingredients. Crack in the egg and combine. The mix should be a dough like consistency, once the mix is combined divide into eight equal parts. Roll the mix together in your hands into balls, then between your hands flatten the mix into round patties. Even the shape and the chill in the fridge for one hour, so the patties set. To serve With a vegetable peeler, peel strips off the cucumber to make cucumber ribbons, slice the tomatoes horizontally and put to one side. On a medium heat grill or BBQ place the patties and brush with olive oil, this stops the chicken from becoming too dry. Cook evenly on both sides for about eight minutes, then toast the burger buns on the grill. Place the bun heals on a serving dish and add a layer of cucumber ribbons then a slice of tomato. Place the pattie on top, then add ketchup, mayonnaise, more cucumber ribbons and jalapenos. Place the bun crown on top of the stack. Serve with coleslaw and fries.
