Serves 3-4, prep time 15 minutes, cooking time 20-25 minutes
6 rashers of smoked bacon
6 cherry tomatoes sliced
Grated parmesan cheese
Mixed dried herbs
Pre-heat the oven to 180 degrees, grease a 6 tin bun tray. Line each edge of tins with a rasher of bacon, pressing firmly into the sides. Break an egg into each into each dish. Top with the sliced tomato and grated parmesan. Sprinkle with some dried herbs. Bake in the oven for 20-5 minutes until the eggs are cooked and set. Using a knife go round they edge of each tin to loosen the bacon, cool on cooling tray. Then serve with ketchup and hash browns.
