You know when you have mate over for dinner and a takeout is out of the question? I really fancied minted lamb chops, so I stopped off at Waitrose on my way home from work. The Waitrose stores in Dubai are great, the fruit is so carefully stacked, the fruit and veg all face the same way, and are so polished they kinda don’t look real.
So to prepare my favorite meal, I covered the chops with some all-purpose seasoning, and sliced a potato, using chopsticks either side, making even cuts, the sticks prevent you cutting the potato completely in half. Then I sprinkled rock salt on top, wrapped it in tin foil and place in the oven.
I do love spinach, and I’m on “I must eat more fruit and veg!” vibe at the mo, but it can taste so bland. So I fried some red onion in a wok, added some mixed spice, chopped tomato and garlic powder, then tossed in the spinach.
I placed the chops on to my hot griddle pan, added some mint sauce to the chops, the are already starting to smell delicious, then mixed some mint sauce with yoghurt as a dressing. The results were amazing, see below!
