My Friday night treat, slow cooked Jerk pork loin. This is such a great way to cook pork. I made cuts along the skin and sprinkled with rock salt and cooked the loin at a high heat for 1 hour, then brushed the top with some Jerk paste and cooked for another 45 minutes on a high heat until the top crisped up. One word, delicious!
