Subs Topped with Avocado, Spinach, Bacon & Tomato

IMG_3564Serves 2, prep time 20 minutes, cooking time 10 minutes

INGREDIENTS
2 long sub rolls, sliced
1 ripe avocado
Juice of a lime
Small bunch of cooked spinach
4 slices of cooked cold bacon sliced into strips
4 tbsp of tzatziki
1 diced tomato outer
1/2 tsp of rock salt
Oil to brush

METHOD
On a dry griddle toast the sliced subs. In a bowl mash the avocado, lime and salt. On a serving tray layout the toasted subs and brush with oil. Layer on the avocado, spinach and then add dollops of tzatziki. Then top with the cooked bacon and diced tomato, season and serve.GMS_THE_MENU_RETURN
