Baked Chicken with Sweet Potato, Red Onion & Rosemary

Serves 2, prep time 15 minutes, cooking time 70 minutes

INGREDIENTS
1/2 fresh chicken, divided
1 red onion
3 garlic cloves, peeled
1 large sweet potato, cubed
10 slices of chorizo
1/2 pint of chicken stock, or red wine
1 tsp cumin seeds
1 tbsp of olive oil
Salt and pepper
1 tsp of mixed herbs
2 sprigs of fresh rosemary
Zest of a lime

METHOD
Preheat the oven to 180 degrees. Wash and cut the chicken. Line an oven proof dish with some oil. Add the chicken pieces. Mix in the onion, sweet potato, chorizo, onion, rosemary and dried herbs. Season and cover with foil, then place in the oven for 50 minutes. Remove the foil, baste and cook for another 20 minutes. Add some chopped rosemary, and then grate over some lime zest and serve.
