Avocado & Bacon Toasties

TOASTIES_01Serves 2, prep time 15 minutes, cooking time 10 minutes

INGREDIENTS
4 slices of wholemeal bread
Oil for frying
14 bacon rashers
1 tsp all-purpose seasoning
1 large ripe avocado

Juice of a lemon
4 cheese slices
1 sliced tomato

1 tsp mixed herbs

METHOD
Heat some oil in a pan then add the bacon, season with the all-purpose seasoning. Toast the bread on both sides. Cut the avocado and remove the stone. Break the avocado into a bowl and add the juice of a lemon, salt and mix into a lumpy paste. When the bacon is crisp remove from the heat. Lay the toast on a serving board then add a layer of avocado. Place on the bacon, keeping some back. Layer the cheese on the top, add the remainder of the bacon, top with tomato and sprinkle with the dried herbs.
