Smoked Salmon, Avocado, Cucumber & Poached Eggs

EGGS_TOAST.jpgServes 2, prep time 15 minutes, cooking time 10 minutes

INGREDIENTS
2 poached eggs
4 slices of wholemeal bread
1 ripe avocado
4 slices of smoked salmon
1 shallot chopped
1/2 diced red pepper
Juice of 1/2 a lemon
1 small sliced cucumber
10 capers
Salt and pepper

METHOD
Boil some water in a pan, place the eggs in poaching bags and lower into the water for four minutes. Toast the bread, meanwhile slice open the avocado remove the stone and spoon the contents into a bowl. Add some salt, lemon juice, half of the chopped shallots and half of the chopped pepper. Mix with a fork into a smooth paste. Remove the toast and place onto two plates, spoon on some guacamole, then add another slice of toast, add more guacamole. Top with slices of salmon and the eggs. Sprinkle over the remainder of the shallots, peppers, and capers, season and serve with sliced cucumber.
