Vegetarian Portobello Mushroom & Halloumi Bagels

INGREDIENTS
2 sesame seed bagels
2 Portobello mushrooms
1 small block  of Halloumi cheese
TO SERVE
1/2 red onion sliced
1 small cucumber sliced into ribbons
1 large tomato sliced
8-10 jalapenos
Mayonnaise
Ketchup

METHOD
Heat some oil in a griddle pan. Wash the mushrooms and remove the stalks, then place in the pan and lower the heat, cook for about 4-5 minutes on each side. In another pan gently heat some oil, cut halloumi cheese into slices and place in the pan, keep the heat low as the cheese can burn quickly. Cook for 2-3 minutes on each side. Next prepare all the serving ingredients, toast the bagels or brown in a dry griddle pan. Place the bagels on plates add a dollop of mayonnaise and ketchup, and then cucumber and tomato. Top with the mushrooms, onion, halloumi and jalapenos.GMS_THE_MENU_RETURN
