Vegan Carrot & Potato Soup

INGREDIENTS
3 pints of vegetable stock
4 carrots peeled and sliced
2 large potatoes peeled and diced
1 tbsp of grated ginger
1/2 tsp of freshly ground nutmeg
1  garlic clove chopped
Salt and pepper

METHOD
Boil all the ingredients in a large pan for 25 minutes until the vegetables soften. Season and remove from the heat. Blitz with a handheld blender until smooth and then serve with some warm bread and top with some basil pesto.
