Courgette & Tomato Flatbread Pizza

INGREDIENTS
2 Arabic flat breads
3 tbsp of red pesto
3 tbsp of tomato puree
1 onion chopped
2 chopped tomatoes
1 garlic clove chopped
2 sliced courgettes
5 sun dried tomatoes sliced
Handful of sliced black olives
Handful of mozzarella cheese

1 tsp of mixed herbs
Handful of beetroot shoots
3 red chillies
Salt and pepper

METHOD
Preheat the oven to 180 degrees. Place a flat bread onto a baking sheet and add a layer of red pesto. Place the second bread on top and layer over the tomato puree. Sprinkle over the onion, garlic and courgette. Add a layer of cheese and top with sun dried tomatoes, sliced olives and dried herbs. Season and place in the oven for 30 minutes, when the cheese has melted allow to cool then top with beetroot shoot, chillies and serve.
