Gluten-Free Spaghetti with Pesto, Peas, Chorizo & Parmesan Shavings

INGREDIENTS
THE PESTO
2 bunches of basil
3 tbsp of toasted pine nuts
1 garlic clove crushed
2 tbsp of grated parmesan cheese
8 tbsp of extra virgin olive oil
Pinch of salt

1/2 pack of gluten-free spaghetti
2 cups of peas
2/3 cup of chopped chorizo
15-20 capers
Parmesan shavings to serve

METHOD
Cook the spaghetti as per packet instructions. Meanwhile, place all the pesto ingredients in a food processor and blitz for two minutes. Remove from the bowl and transfer to small dish and chill in the fridge. Cook the peas and stand to one side. When the pasta is cooked remove from the hob, drain and place in a large bowl. Add the pesto, chopped chorizo, capers and peas and mix well. Finally; place the pasta on a large serving plate, top with parmesan shavings, then serve.
