Courgette Spaghetti, Red Onion, Red Cabbage, Ham & Pesto

1 large bunch of basil
4 tbsp of olive oil
2 tbsp of grated Parmesan
2 tbsp of pine nuts
Pinch of rock salt

2 courgettes spiralized
1 vegetable stock cube
1 clove of garlic chopped
1 handful of chopped red cabbage
1/2 red onion chopped
6 slices of smoked ham sliced
10-15 capers
Salt and pepper
Parmesan shavings to serve

Spiralize the courgettes, wash and place on some kitchen towel to soak up the excess moisture. Prepare the pesto by adding the ingredients in a food processor and blitz. Remove from the bowl and set to one side. Place the courgette into a bowl and crumble in the stock cube, add a little water and place in the microwave for two minutes. Drain the water and stir in three tablespoons of pesto. To serve, layer the remainder of the ingredients in a large serving dish, top with parmesan shavings, capers and pepper.
