Meat Patties, Feta Cheese, Mint Yoghurt and Green Olives in Arabic Flat Breads

500g medium pack of minced beef or lamb
5 cream crackers crushed
12 garlic cloves chopped
1 egg
1 tsp of oregano
1 tsp of cayenne pepper
6 anchovies chopped
2 tbsp of crumbled feta cheese
Rind of a lemon
4 tbsp of Greek yoghurt
4 tbsp of chopped fresh mint
Juice of a lemon
2 tbsp of cold water
Salt & pepper

4 medium Arabic flat bread
Thinly sliced red onion
Handful of coriander
Sliced cherry tomatoes
4 tbsp of crumbled feta cheese
Mini greens or coriander leavesP1060127METHOD
Place the crackers in a zip-lock bag and using a rolling pin crush the biscuits into crumbs. Place all the ingredients into a large mixing bowl. Using your hands combine all the ingredients. When the mixture is almost dough like remove and roll out on a flat surface. Divide the meat into equal portions, use a dessert spoon to measure each ball. Flatten, then chill in the fridge. Next, prepare the dressing, pour the yoghurt into a bowl,  add the remainder of the ingredients and mix, cover and chill in the refrigerator. Heat some oil in a pan on a low heat and start to brown the meat, this should take around 10-15 minutes. While the meat is cooking warm the bread in the microwave, fold and set out on a serving dish. Add a layer of yoghurt then onion, then the meat in the centre of the bread. Top with more yoghurt, feta cheese, olives, tomato, red onion, mint and mini greens. Season and serve.
