Tomato & Red Onion Tagliatelle with Smoked Trout

INGREDIENTS
1/2 pack of tagliatelle
15 cherry tomatoes
1/2 chopped red onion
1 tbsp of grape vinegar
A handful of basil leaves
1 large smoked trout fillet
Salt & pepper
Zest of half a lemon

METHOD
Cooked
the tagliatelle as per pack instructions. Cut the tomatoes in half and place in a bowl and mix with the chopped onion, vinegar, basil leaves and season. When the tagliatelle is cooked drain and add to the bowl and combine. Serve in pasta dishes, flake over the trout fillets, grate some lemon zest and top with some basil leaves.
