Crushed Baked Potatoes topped with Prawns & Artichoke

4 baking potatoes
1 tbsp of olive oil
1 tbsp of rock salt
2 cups of cook peeled prawns
6 artichokes hearts chopped
1 tbsp of cayenne
3 tbsp of mayonnaise
2 tbsp of ketchup
1 cup of sliced lettuce

Preheat the oven to 180 degrees. Bring a large pan of salted water to the boil. Place the potatoes in the pan and cook for twenty minutes. Next, add the mayonnaise, ketchup and cayenne pepper to a bowl and stir, then add the prawns and coat with the sauce then chill in the fridge. After twenty minutes remove the potatoes from the water and place on a lined baking tray. Prick the tops of each potato and then gently crush to break the skin. Sprinkle with rock salt and place in the oven for 45 minutes. When the potatoes are crisp and, golden remove from the oven and drizzle over some olive oil. Top each potato with chopped artichokes, lettuce then top with prawns, add a sprinkle of cayenne pepper and serve.
