Halloumi, Tomato, Houmous & Egg Flatbreads

INGREDIENTS
2 medium flatbreads
6 tbsp of fresh houmous
15 cherry plum tomatoes quartered
Oil for frying
4 free-range eggs
1 block of halloumi cheese sliced
Pickles to serve
Salt & pepper

METHOD
Heat some oil in a griddle pan and fry the sliced halloumi for two minutes until browned. In a separate mini frying pan start cooking the eggs. Then warm the flat bread in the microwave for 30 seconds. Place each bread onto plates; add a layer of houmous, then some sliced tomato and halloumi. Top with the fried eggs, add the remainder of the cheese and tomato. Top with some pickles, season and serve.
