Sweet Potato Fries with Cheese, Guacamole, Sour Cream topped with Jalapenos

INGREDIENTS
1 large sweet potato
2 tbsp of vegetable oil
2 tsp of cayenne pepper
1 cup of grated cheddar cheese
2 large tomatoes, hollowed and cubed

6 tbsp of guacamole
4 tbsp of sour cream
1/2 a leek sliced
A handful of jalapenos
A handful of chopped coriander

METHOD
Preheat the oven to 200 degrees. Wash the sweet potato and cut into even slices. Dry off the excess water and place in a large bowl, cover the chips with oil, cayenne pepper, salt and place a baking sheet. Cook for 35-40 minutes until crisp. Remove the chips and transfer to an oven-proof dish, top with cheese and return the oven until the cheese melts. Lastly, remove from the oven; top with the guacamole, sour cream, tomatoes, leeks, jalapenos and chopped coriander, and serve.P1070922.jpgGMS_THE_MENU_RETURN
