Tomato & Avocado Salad Topped with Fresh Dill

INGREDIENTS
1 medium romaine lettuce sliced
3 large tomatoes cored & cubed
2 ripe avocados
Juice of a lemon
1 spiralized carrot

3 spring onions chopped 
2 tbsp of olive oil
1 tbsp of fresh chopped dill
Rock salt

Wash and dry the lettuce and slice into strips. Core and cubed the tomatoes, then spiralize the carrot. Lay the lettuce in a large serving bowl, add half the diced tomato. Next, add the carrot and half the spring onions. Cut the avocado lengthways, remove the stone and with a small melon scooper, scoop out the avocado. Place in a bowl and mix with the lemon juice. Finally, add to the serving dish the remainder of the ingredients, top with avocado, fresh dill, pour over the olive oil, season, and serve.
