Chorizo & Red Pepper Spaghetti

1/2 pack of spaghetti
1 tbsp of olive oil
2 garlic cloves chopped
1 red pepper diced
1 medium chorizo sausage sliced
10 sliced sundried tomatoes
Salt & pepper

1 tsp of oil from the sundried tomatoes
4 tbsp of grated parmesan
Black pepper

Bring a full pan of salted water to the boil. Cook the pasta as per pack instructions. Heat the oil in a shallow pan, add the garlic and chopped peppers. Saute for a few minutes until soft. Season, then add the chorizo, the spices in the chorizo will begin to release and start to colour to the oil. When the pasta is cooked remove from the heat and drain. Finally, add the sundried tomatoes to the pan, heat for two minutes then take off the heat. Pour the spaghetti into a large bowl, add the oil from the sundried tomatoes and half of the parmesan. Using your hands mix the ingredients together until the pasta is coated, serve into two pasta dishes. Finally, pour over the peppers and chorizo, top with the remainder of the cheese, fresh black pepper and serve.
