Apple & Ginger Marmalade Tart

Serves 6, prep time 15 minutes, cooking time 45 minutes

1 sheet of shortcrust pastry
3 large apples
3 tbsp of ginger marmalade
4 tbsp of brown sugar
1 tsp of mixed spice
Icing sugar to dust
Preheat the oven to 180 degrees. Grease a tart tin, line the tin with the pastry sheet and trim off the excess. Wash and core the apples, using a mandolin finely slice the apples. Using a fork, prick the base of the pastry. Then arrange the apple slices overlapping around the edge of the tin. Add a layer of ginger marmalade, sprinkle over some brown sugar and mixed spice. Repeat, adding more layers of apple. Use the remainder of the apples to fill the centre of the tart. Top with some more sugar then bake in the oven for 45 minutes. When the pastry is golden brown, remove the tart from the oven and allow to cool. Dust with icing sugar and serve with some cream or vanilla ice cream.
