Za’taar Roasted Chicken

ZATAAR.jpgServes 4, prep time 10 minutes, cooking time 40-50 minutes (plus an hour to marinade)

INGREDIENTS
1 large chicken cut into pieces
2 tbsp of Za’taar Spice Mix
2 garlic cloves chopped
½ tbsp of rock salt
½ cup of olive oil
Zest and juice of a lemon
Lemon slices and chopped coriander to serve

METHOD
Preheat the oven to 180 degrees, Wash and trim the chicken and divide into equal parts. Place the Za’taar spice mix in a pestle and motor with the garlic and rock salt and crush. Add the lemon juice, zest, then and add the oil and mix into a paste. Place the chicken in an oven proof dish. Coat with the marinade (Best to do this as far in advance as possible). Cook in the oven for 40-50 minutes basting half way. When cooked serve topped with lemon slices and chopped coriander.
