Chilli Bean & Mackerel One-Pan Breakfast

1 tbsp of olive oil
1 large red onion chopped
2 garlic cloves chopped
Salt & pepper
4 tbsp of tomato puree
½ tsp of smoked paprika
1 cup of hot water
5 sliced sun-dried tomatoes
1 can of kidney beans drained and rinsed
2 smoked mackerel fillets skinned
4 free-range eggs
6-8 Sliced jalapenos 
Chopped coriander to serve

Heat the oil over a medium heat and sauté the onions with the chopped garlic until soft. Next add the tomato puree, paprika, season and stir. Add the hot water stir and reduce the heat to a simmer, for five minutes. Add the beans, sundried tomatoes and cook for a further five minutes. Next, make four wells in the sauce and break an egg to each, break the mackerel on top, cover and cook until the eggs set. Leave covered and allow to stand for a few minutes then serve topped with sliced jalapenos and freshly chopped coriander.
