Vegan Potato & Carrot Soup

P1030057Serves 4, prep time 15 minutes, cooking time 25

3 pints of vegetable stock
4 carrots peeled and sliced
2 large potatoes peeled and diced
1 tbsp of grated ginger
½ tsp of freshly
ground nutmeg
1  garlic clove chopped
Salt and pepper

Boil all the ingredients in a large pan for 25 minutes until the vegetables soften. Season and remove from the heat. Blitz with a handheld blender until smooth. Serve with some warm bread and top with some basil pesto.
