Whitebait with Coriander & Lime Wedges

IMG_1501Serves 6, prep time 10 minutes, cooking time 15 minutes

1 bag of whitebait, defrosted
3 cups of vegetable oil for frying
1 cup of plain flour
1 tsp of cayenne pepper
1/2 tsp of garlic powder
Salt and pepper
Handful of coriander, chopped
Lime wedges

3 tbs of mayonnaise
1/2 tsp of garlic powder

Heat the oil in a deep pan or wok. Rinse the whitebait in cold water and dry on paper towels. Add the cup of flour to a large bowl with the cayenne pepper and garlic powder, season and mix. Coat the fish with the flour mix. When the oil is hot add a handful of the fish. Once the fish crisps up remove from the oil with a mesh spoon and place on some paper towels to drain the excess oil. Repeat the process until all the fish is fried. In a small bowl mix the garlic powder into the mayonnaise. Put the fish on a plate and sprinkle over the chopped coriander and squeeze over the lime. Serve with garlic mayonnaise.
