Garlic & Rosemary Hasselback Potatoes

INGREDIENTS

4 large potatoes, washed 
Spray vegetable oil
3 cloves of garlic
2 tbsp of chopped fresh rosemary
Rock salt
Fresh ground pepper

METHOD
Preheat oven to 200 degrees. Place a potato on a board. Lay two chopsticks either side of the potato, so you don’t slice the whole way through, make thin, evenly spaced cuts. Next place the potatoes in a baking dish, separate the slices a little and spray with oil. Sprinkle over the garlic and chopped rosemary. Season with rock salt and ground pepper. Bake for an hour or until golden crisp and brown. Remove from the oven add some rock salt and serve topped with soft cheese or baked beans.
