Chicken, Spinach & Hummus Flatbread

INGREDIENTS
1 large Arabic flatbread
1 large grilled chicken breast
4 tbsp of hummus
Handful spinach leaves
1 large tomato cored and diced
Handful of sliced black olives
2 tbsp of olive oil
Salt & pepper

METHOD
Preheat the over to 180 degrees. Pre-cook the chicken breast in some garlic and all-purpose seasoning, allow to cool. Heat the bread in the oven for 5-10 minutes. Then lay the bread on a flat surface the layer over the hummus, add slices of chicken, drizzle with some olive oil. Top with spinach, diced tomato and spinach, drizzle over some more oil, season and serve
