Vegetarian Portobello Mushroom & Halloumi Bagels

INGREDIENTS
2 Portobello mushrooms
1 small block of Halloumi cheese
2 sesame seed bagels

TO SERVE
1/2 red onion sliced
Mayonnaise
Ketchup
1 small cucumber, sliced into ribbons
1 large tomato, sliced
8-10 jalapeños

METHOD
Heat some oil in a griddle pan. Wash the mushrooms and remove the stalks, add to the pan, lower the heat and cook for about 4-5 minutes on each side. In another pan gently heat some oil, cut the halloumi cheese into slices and add to the pan (keep the heat low as the cheese can burn quickly). Cook for 2-3 minutes on each side. Next, prepare all the serving ingredients. Toast the bagels under the grill or in a dry griddle pan. Place the bagels on plates add a dollop of mayonnaise and ketchup, then cucumber and tomato. Top with the mushrooms, onion, halloumi and jalapeños.
