Smoked Salmon Omelette

1 tbsp of vegetable oil
1 onion diced
4 free-range eggs
1 tsp of garlic powder
Handful of cooked peas

4 slices of smoked salmon
1 tsp of smoked paprika
Handful of capers
2 spring onions chopped

Heat the oil in a frying pan, add the onions and saute until soft. Beat the eggs with the garlic powder then add to the pan. Stir and even the egg in the pan. Slice the salmon and cooked peas evenly over the egg. Turn down the heat, sprinkle with cayenne pepper and cover with a lid. Allow to cook for a few minutes, when the egg has cooked remove from the heat. Top with capers and spring onions and serve.
