Bok Choy, Courgette, Cashew & Pork Soup

2 pints of vegetable stock
1 garlic clove chopped
1 tbsp of chopped ginger
1 tbsp of soy sauce
Salt and pepper
1 spiralized courgette

3 bok choy
1 cup of toasted cashew nuts
1 cup of soybeans
1 cup of snap peas

2 cups of cooked of pork

Heat the vegetable stock in a large pan. Add the garlic, ginger, soy sauce and simmer for 10 minutes. Then add the bok choy, snap peas, soybeans, courgette and season. Simmer for another 10 minutes then add the cooked meat and cashews. Cook for a further 10 minutes, then pour into soup bowls and serve.
