Baked Apples with Cranberries & Almonds

6 large cooking apples
4 tbsp of mixed dried fruit
2 tsp of dried peel
1/2 tsp of mixed spice
4 tsp of butter
2 tbsp of brown sugar
2 tbsp of golden syrup
1 cup of boiling water

Handful of dried cranberries
A handful of flaked almonds
A few sprigs of rosemary

Preheat your oven to 180°C. Wash and dry the apples, place them on a cutting board and either using a slim bladed knife or apple corer remove the core of each apple. Use a teaspoon to remove any excess. Place the apples in a greased dish set to one side while you prepare the filling. Combine the sugar, dried fruit, mixed peel, spice and butter. Using a small spoon fill each apple, allowing some to flow over. Drizzle over with half the golden syrup, cranberries and flaked almonds. Pour the boiling in into the dish and cook in the oven for 35-40 minutes until tender. Remove the oven and allow to cool for ten minutes. Drizzle over the remaining syrup, top with the remainder of the cranberries, almonds and rosemary.
