Rosemary, Lime & Garlic Chicken with Roasted Pumpkin

INGREDIENTS
1/4 of a medium size pumpkin
2 tbsp of olive oil
8 chicken thighs

FOR THE MARINADE
2 handfuls of chopped rosemary

6 garlic cloves chopped
2 tbsp of honey
Juice and zest of a lime
1/2 tsp of cayenne pepper
Salt & pepper
3 limes

Preheat the over to 200 degrees. Peel and cube the pumpkin, coat with oil, season and place in an ovenproof dish. place in the oven for 50 minutes. Top with some chopped rosemary and place in the oven. Next, wash and trim the chicken, the make three cuts in each of the legs, then arrange on a cooking tray. Add all the ingredients for the marinade to a jug and mix. Coat the chicken with the marinade, add some limes, this can be done an hour before. Place in the oven for 45-50 minutes basting occasionally. Check the chicken is cooked and remove from the oven. Heat a griddle pan and grill the chicken with the remainder of the marinade from the cooking tray. Cook on both sides until the skin blackens. Remove from the heat and serve with lime wedges, roasted pumpkin and the marinade from the griddle pan.
