Cheesy All-in-one Bacon & Eggs

2 tbsp of margarine
6 rashers of bacon (you can also use chicken or beef bacon)
4 spring onions chopped
6 free-range eggs
10 cherry tomatoes halved
1 cup of grated mozzarella
2 tbsp of dried oregano
1 tbsp of smoked cayenne pepper

Preheat the oven to 180 degrees. Grease a six-cup baking tin. Line the edge of each cup with bacon, add half the spring onion to each cup keeping some to top. Break in an egg and dived the tomatoes between each cup. Finally, top with grated mozzarella, oregano and cayenne pepper. Bake in the oven for 30-40 until the egg has set and the cheese is golden. Remove from the oven and allow to cool, using a knife cut around each cup and remove from the tin. Finally, serve with some ketchup.
