Spinach & Sweet Potato Soup

1 litre of vegetable stock
1 large sweet potato cubed
1 tbsp of grated ginger
1 red onion chopped
2 garlic cloves chopped
2 tbsp of turmeric
2 tbsp of cumin seeds
1 tsp of smoked paprika
Salt & pepper
200g spinach leaves
1 can of chopped tomatoes
1 tbsp of Worcester sauce
250g of mascarpone cheese
(keeping a little to serve)

In a deep pan bring the vegetable stock to the boil. Add the sweet potato, ginger, onion and spices, season and reduce the heat to and simmer for 30 minutes. Next, stir in the spinach, chopped tomatoes, Worcester sauce and mascarpone cheese. Simmer for a further 15 minutes. Turn off the heat, using a handheld blender blitz the soup until smooth. Serve topped with some fresh pepper and mascarpone cheese.
