Toad-in-the Hole

INGREDIENTS
FOR THE BATTER
140g plain flour
4 free-range eggs
200ml milk
3 tbsp of water
Salt & pepper
4 tbsp of vegetable oil
6 sausages (beef, chicken or vegetarian)
2 tbsp vegetable oil


Method
Heat the oven to 200 degrees. Pour some oil into an oven-proof dish and place in the oven for 20 minutes. Add the flour to a bowl, beat in four eggs until smooth. Gradually mix in the milk and water, season and whisk until smooth. Pour the batter into a jug and set to one side. Heat some oil in a pan and brown off the sausages. Next, remove the dish from the oven. Pour in the batter, add the sausages the place back in the oven for 30-40 minutes until the batter is puffed up and browned. Serve with mashed potato and gravy.
