Chicken Sausage Casserole


You can Replace the chicken sausages with veggie ones for a vegetarian option. I love this one-pot recipe, an easy mid-week meal.

Serves 4, prep time 15 minutes, cooking time 45 minutes

2 tbsp olive oil
8 chicken sausages
2 onions diced
2 garlic cloves, chopped
1 tsp smoked paprika
½ tsp ground cumin
2 tsp dried thyme
2 cans of cherry tomatoes
2 tbsp of tomato puree
1 chicken or vegetable stock cube
2 tbsp of Worcester sauce
1 glass of red wine (optional)
1 can of white beans, drained and rinsed
6 potatoes washed and cubed
Chopped parsley to serve

Preheat the oven to 180 degrees. Heat the oil in a frying pan and brown the sausages. Remove the sausages from the pan,  in the same pan sauté the onions and garlic with the paprika, cumin and thyme. Next, add the cherry tomatoes, tomato puree, red wine, stock cube and Worcester sauce. Season and simmer for 10 minutes. Next, pour the sauce into an oven proof dish, add the sausages, beans and potatoes. Cover and cook for 45 minutes, check the potatoes are soft, then serve topped with some chopped parsley.
