Chicken with Sun-Dried Tomatoes, Mozzarella & Basil

2 tbsp of olive oil
2 large free-range chicken breasts
2 garlic cloves chopped
6 sun-dried tomatoes sliced
Handful of basil leaves
6 slices of mozzarella
6 cocktails sticks

Place the chicken breasts on a flat surface, Using a sharp knife cut open the breast, add the garlic, sun-dried tomatoes, fold the cheese slices and place on top. Add the basil leaves the close the breasts. Pinch the edges of the chicken together and secure with cocktail sticks. Heat the oil in a griddle pan and grill the chicken both sides. When the chicken is cooked cut into pieces, top with basil leaves and serve with fresh tomato.
