Serves 6-8, prep time 20 minutes, cooking time 1 hour
300g plain flour
1 tsp bicarbonate of soda
½ tsp salt
225g caster sugar
4 ripe bananas
90ml of milk
½ tsp of all-spice
1 tsp vanilla extract
Icing sugar to serve
Preheat the oven to 180°C. Sift the flour, bicarbonate of soda and salt into a large mixing bowl.
In a separate bowl, cream the butter and sugar together until light and fluffy, then mix in the eggs.
Using a fork mash the bananas and add to the mix.
Next, add the milk all-spice and vanilla extract, and continue to mix.
Now fold in the flour mixture. Line a medium loaf tin with a greaseproof liner and pour in the cake mix.
Place in the oven and bake for around 1 hour until golden-brown.
Remove the loaf from the tin and allow to cool on a wire rack.
Dust with icing sugar and serve.
