Spiced Banana Loaf

300g plain flour
1 tsp bicarbonate of soda
½ tsp salt
120g butter
225g caster sugar
2 eggs
4 ripe bananas
3fl oz milk
½ tsp of all-spice
1 tsp vanilla extract
Icing sugar to serve

Preheat the oven to 180 degrees. Sift the flour, bicarbonate of soda and salt into a large mixing bowl. In a separate bowl, cream the butter and sugar together until light and fluffy, then mix in the eggs. Using a fork mash the bananas and add to the mix. Next, add the milk all-spice and vanilla extract, and continue to mix. Now fold in the flour mixture. Line a medium loaf tin with a greaseproof liner and pour in the cake mix. Place in the oven and bake for about an hour until golden-brown. Remove the loaf from the tin and allow to cool on a wire rack. Dust with icing sugar and serve.
