Valentines Raspberry Pavlova

3 eggs whites
170g castor sugar
Medium carton of double cream
120g raspberries
4 tbsp of raspberry jam
Icing sugar
Heart shape candy decorations

Separate the eggs and place in a large bowl, with an electric whisk start whisking the egg whites. Once the eggs thicken one spoonful at a time add the sugar. Once the sugar is added, the eggs should look silky in texture. On a lined baking tray start building a circular base about 15cms in diameter. Then around the edge start building a wall. Use forks to shape the egg into what looks like a flan case. Place in the oven at 150 degrees for an hour. After an hour turn off the oven and leave the meringue to cool. Whip the double cream then add a layer the meringue base. Add drops of raspberry jam around the edge and in the centre of the meringue. Top with the raspberries sprinkle the love hearts and dust with icing sugar.
