Courgette Spaghetti, Red Cabbage, Ham & Pesto Salad

INGREDIENTS
FOR THE PESTO
1 large bunch of basil
4 tbsp of olive oil
2 tbsp of grated Parmesan
2 tbsp of pine nuts
Pinch of rock salt

FOR THE PASTA
2 courgettes spiralized
1 vegetable stock cube
1 clove of garlic chopped
1 handful of chopped red cabbage
1/2 red onion chopped
6 slices of smoked ham sliced
10-15 capers
Salt & pepper
Parmesan shavings to serve

METHOD
Spiralize the courgettes, wash and place on some kitchen towel to soak up the excess moisture. Prepare the pesto by adding the ingredients in a food processor and blitzing. Place in an airtight container. Put the courgette into a bowl and crumble in the stock cube, add a little water, place in the microwave for two minutes. Drain the water and stir in three tablespoons of pesto. To serve, layer the remainder of the ingredients in a large serving dish, top with parmesan shavings, capers and pepper.
