Vegetarian Toad-in-the-hole

140g plain flour
4 free-range eggs
200ml milk including 3 tbsp of water
Salt & pepper
4 tbsp of vegetable oil
6 vegetarian sausages
2 tbsp vegetable oil
2 sprigs of fresh rosemary

Heat the oven to 200 degrees. Pour the oil into an oven-proof dish and break in the rosemary. Place the dish in the oven for approximately 20 minutes until the oil is smoking hot. Meanwhile add the flour to a bowl, whisk in eggs until smooth. Gradually add the milk, season and whisk until smooth (similar to a thick cream texture). Pour the batter into a jug and set to one side. Heat some oil in a pan and brown off the sausages. Next, remove the dish from the oven. Pour in the batter, return to the oven for five minutes, then add the sausages and place back in the oven for 30-40 minutes until the batter is puffed up and browned. Top with some sliced spring onion, serve with mashed potato and gravy.
