Cheese & Ham Frittata

Serves 2, prep time 10 minutes, cooking time 15 minutes

1 tbsp of vegetable oil
1 green pepper sliced into strips
1/2 of garlic salt
Black pepper

200g of sliced smoked ham cut into ribbons
5 free-range eggs
100g of grated cheddar cheese
2 tbsp of dried oregano
(1tbsp of chopped coriander to serve)

Heat the oil in a pan and shallow fry the peppers. Sprinkle with garlic salt and black pepper. Add half the smoked ham and reduce the heat. Beat the eggs together and pour around the edge of the pan. Even out, then top with the remainder of the ham, sprinkle over the cheese and oregano. Turn the heat right down and cover the pan, cook until the frittata has set but still soft. Allow to cool for five minutes then slice into equal portions, serve topped with fresh coriander.
