Smoked Shatta Baked Chicken

1 tbsp of oil
1 large onion diced
2 cloves of garlic
2 large chicken breasts
2 tsp of all-purpose seasoning
2 tsp of shatta chilli paste
1 red pepper cubed
3 stalks of celery cut into 2cm pieces
Salt & pepper
1 tsp of cayenne pepper
1 can of chopped tomatoes
2 tbsp of tomato purée
1 glass of red wine (optional)
(Steamed rice and basil leaves to serve)

Preheat the oven to 180 degrees. Heat the oil in a pan, sauté the onions with the garlic until soft. Add the chicken to the pan, sprinkle with all-purpose seasoning, season, then continue to cook the chicken until browned. Add the shatta paste, and stir for two minutes. Transfer the chicken to an oven-proof dish. Add the pepper, celery, chopped tomatoes, tomato purée and red wine. Cover the dish with foil, then bake in the oven for 45 minutes, string occasionally. Serve with steamed rice, topped with torn basil.
