Spicy Bean One-Pan Breakfast
Spicy Bean One-Pan Breakfast

Serves 2, prep time 15 minutes, cooking time 15 minutes

1 tbsp of vegetable oil
1 large onion sliced
1 garlic clove chopped
1 1/2 curry powder
1 tsp of cayenne pepper
1 can of diced tomatoes
1 can of kidney beans, rinsed and drained
4 fresh tomatoes, cored and cubed
Salt & pepper
4 free-range eggs

Chopped spring onion
Toasted flatbread

Heat the oil in an ovenproof pan. Sauté the onions and garlic until soft. Add the curry powder and cayenne pepper. Stir to coat the onion, add the chopped tomatoes, season and reduce the heat; stir and simmer for two minutes. Add the beans and tomato stir, cover and simmer for a further ten minutes. Allowing the sauce to reduce. Make four wells, crack an egg into each one, keeping the heat low cook until the egg whites set. Remove from the heat, top with spring onion and serve with toasted flatbread.
