Chicken & Pepper Skewers

Serves 2, prep time 10 minutes, cooking time 15 minutes

INGREDIENTS
2 large chicken breasts, cubed
1 tbsp of olive oil
2 tbsp of chicken seasoning
12 cherry tomatoes
1 green pepper, cubed
1 yellow pepper, cubed
1 large onion, cut into chunks
Salt & pepper
Slices of red onion to serve
4 skewers (soak in cold water for 20 minutes before use)

METHOD
Place the chicken in a bowl, add the oil and stir. Add the seasoning and coat the chicken. Slide the meat and vegetables on to the skewers starting with tomatoes and alternating the chicken and vegetables. Next, heat some oil in a griddle pan over a medium heat. Place the kebabs in the pan and add a little more chicken seasoning, salt and pepper. Cook, occasionally turning so the chicken is evenly cooked, then serve with slices of red onion.
