Bok Choy, Asparagus, Leek & Mushroom Stir Fry

Serves 2, prep time 15 minutes, cooking time 15 minutes

INGREDIENTS
2 tbsp of vegetable oil
15 asparagus stems trimmed and cut into three
1 tsp of garlic salt
1 vegetable stock cube
5cm piece of ginger cut into strips
1 large leek sliced
250g of mushrooms sliced
1 tbsp of soy sauce
1 tbsp of fish sauce
6 bok choy bulbs trimmed and washed
1 cup of chopped coriander
3 chopped red chillis
Steamed rice to serve

METHOD
Heat the oil in a wok over a high heat. Add the garlic salt and asparagus, stir for three minutes. Add the soy sauce and fish sauce. Next, add the leeks and cook for three minutes, then add the mushrooms, stock cube and ginger. Add the bok choy and water, keep stirring until the bok choy starts to wilt. Place half the coriander and chillis to the wok and stir for a further two minutes. Remove the wok from the heat, top with the remainder of the coriander and chilli, serve with steamed rice.
