Squid filled with Mushrooms & Spinach
You will need a steamer for this recipe, I’ve used a bamboo steamer with a lid. Alternatively, you can shallow fry the squid in some oil.

Makes 6, prep time 10 minutes, cooking time 15 minutes

6 squid, cleaned
1 tbsp of butter
2 portabella mushrooms chopped
1 garlic clove chopped
500g spinach

2 tbsp of cream cheese
1 tbsp of chopped parsley
½ tsp of cayenne pepper
Salt & pepper
Lime wedges to serve
6 cocktails sticks

Bring a 750ml of salted water to the boil in a deep pan. Place the spinach and ½ cup of water into a bowl, cover and cook in the microwave for five minutes. Drain and allow to cool, squeeze out the excess water, then finely chop and set to one side. Next, melt the butter in a pan,  sauté the mushrooms and garlic. Allow to cool then and the spinach, cream cheese, season and mix. Using a small spoon fill each squid, pushing the mixture deep into the pockets. Seal each one with a cocktail stick, then place in the steamer for 15 minutes (or shallow fry). Finally, serve with lime wedges and top with parsley.
